For the past few weeks, my sister Kerry took on a blood-sugar balancing 14-day program that I created. Half way through she said “I am sleeping better and feel more rested in the morning when I wake up!” So proud of her right now!
Here is one of the recipes she made based off of a recipe in Well Fed by Melissa Joulwan.
- 1 lb ground pork
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1/4 tsp nutmeg
- pinch of cinnamon and cloves
- 1/2 tsp tarragon leaves
- 1/8 cup of minced parsley
- 1/2 tbsp dried chives
- 1 clove of garlic, minced
- 2 – 3 large eggs, hard boiled and peeled
Here is my take on how I cooked the scotch eggs. They were delish!
Prior to mixing ground pork and preparing your meal, cook 2-3 hard boiled eggs and let them cool. Mix all of the ingredients into the pork, minus the eggs. After meat mixture is ready simply wrap around your egg and pop in the oven for 25 minutes at 375F. Then turn up the oven to 400F for the last 5 to 10 minutes. When I turned the oven up, I turned each one over to ensure cooked through for the last 10min of cooking time.
